Peanut Butter and Jelly Muffins
Ingredients
1 Cup Applesauce (or mashed banana)
1/2 Cup Peanut Butter (creamy or crunchy)
1/4 Cup Maple Syrup
2 Eggs
1 tsp. Vanilla Extract
1 1/2 Cup All-Purpose Flour
1 tsp. Baking Powder
1/2 tsp. Salt
1/4 Cup Jam (strawberry, raspberry, or any other fruit jam)
Directions
1. Preheat oven to 350 degrees F.
2. Line 12 cup muffin tin with muffin liners.
3. In large bowl whisk eggs, applesauce or bananas, peanut butter, maple syrup, and vanilla until smooth.
4. Add to the wet ingredients, flour, baking powder, and salt. Combine until fully incorporated.
5. Scoop the batter into muffin liners about 3/4 full.
6. Add 1 tsp. jam on top of each muffin - use the spoon to swirl the jam into the top layer of the muffin batter.
7. Bake for 25 minutes or until toothpick comes out clean, then let cool for 3-5 minutes, then transfer the muffins to a wire rack to cool.
8. Serve muffins with fresh fruit, cup of milk, or other preferred breakfast sides.
